01 Preparation and Milling

Why did the wheat mash stop flowing?

If it sticks, stop the pump, loosen only the top section and restart at a lower rate. Forcing sparge liquor can channel the bed and extract tannin without recovering much useful sugar.

Why are banana and clove missing?

Confirm that the culture is genuinely a phenolic wheat strain, then review its freshness, pitch rate and measured wort temperature. Too-cool fermentation can suppress ester, while excessive heat creates solvent alcohol. The ferulic rest supports clove precursor, but yeast genetics and fermentation management remain decisive.

Is 3.0 volumes of carbonation safe in standard bottles?

Do not assume so. Use only bottles and closures explicitly rated for that pressure, inspect them for damage, and calculate sugar from actual volume and beer temperature. A stable final gravity is non-negotiable. If suitable bottles are unavailable, package to a lower target or use a pressure-rated keg.

Why does the beer taste alcoholic and thin?
